Corndog Muffins

Ingredients
- 1 egg
- 1 ¼ cups milk
- 1 cup Sunflour self-rising corn meal mix
- 1 cup Sunflour self-rising flour
- 1 tablespoon sugar
- 2 tablespoons oil
- Smokey sausage links (short) or hotdogs cut into thirds
- Optional: Mustard
Instructions
- Preheat oven to 425°. Either line small muffin tins with muffin papers or grease/spray muffin tins thoroughly.
- Beat egg slightly, add milk and combine.
- Mix in remaining ingredients until combined.
- Fill prepared muffin tins about 2/3 full.
- Place smokies or cut hot dogs in the center of each filled muffin tin.
- Bake for 15 minutes, or until done.
- Allow to cool slightly, then remove muffins from muffin tins, serve with mustard.
