Ingredients

  • 1 egg, separated. Beat whites and set aside
  • 1 cup cornflake cereal, crushed to make ½ cup
  • Crust:
  • 3/4 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup cold butter
  • Beat egg yolk; add milk to make 1/3 cup
  • Apple Mixture:
  • 4 cups apple slices, without peels
  • 1/3 cup firmly packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • Glaze:
  • 1/2 cup powdered sugar
  • 1 to 2 tablespoons milk
  • 1/2 teaspoon vanilla or almond extract

Instructions

  1. Mix flours, salt, and sugar.
  2. Using a pastry blender or 2 knives, cut butter into flour mixture until crumbly.
  3. Add egg mixture and mix thoroughly.
  4. On floured board, roll out half of the dough and line the bottom of a 9x9-inch pan.
  5. Sprinkle crushed cereal on bottom crust.
  6. Combine apple ingredients and spread over cereal.
  7. Roll out the remaining dough into a 9x9" square, and place over apples.
  8. Spread remaining beaten egg whites over top.
  9. Bake in preheated 325-degree oven 45 to 50 minutes. Cool.
  10. Glaze: Mix powdered sugar and 1 tablespoon of milk, and extract. add extra milk as needed for a thin consistency.
  11. Drizzle glaze over cooled apple squares, cool to allow the glaze to set.
