Pepper Jack Corn Bread


  • 2 cups self-rising corn meal mix* 1 Tbsp. sugar 1/4 tsp. baking soda 1 1/2 cups buttermilk 1 egg 1/4 cup oil 1/3 cup onion, finely chopped
  • 1 1/2 cups pepper jack (Monterey Jack Jalapeño) cheese, finely chopped

Preparation Combine corn meal mix, sugar and soda. Add buttermilk, egg, oil, onion and cheese. Stir until well blended. Pour batter into greased 9-inch square pan. Bake 25 to 30 minutes or until well browned. *If corn meal mix is not available, substitute:
1 1/2 cups corn meal, 1/2 cup all-purpose flour, 1 tablespoon baking powder and 1 teaspoon salt.
